If you know anything about me, then you know that I love to find recipes that allow me to still munch on the foods that I would otherwise have to eliminate due to my gluten-free and dairy-free lifestyle. Which is why I have to share this delicious buckwheat pancake recipe!

The fact is, maintaining a gluten-free and dairy-free lifestyle is incredibly hard when I’m constantly surrounded by foods that I have always loved.

I’ll admit that have occasionally given in to the temptation, which usually comes with consequences. So instead, I do my best to find recipes that allow me to still enjoy the foods and treats that I love.

And although I would love to claim this recipe as my own, I have to admit that it is NOT mine. This recipe is an adaptation from its original owner, Ashley Adams, who posted it on The Spruce Eats website.

But even though it is not my own recipe, it is DEFINITELY worth sharing!

The only change I made to this delicious buckwheat pancake recipe, is that I decided to add my favorite allergy friendly chocolate chips.  Because in my opinion, you can never go wrong with adding chocolate to a pancake recipe.

And so, without further ado, lets get into the ingredient list!

Ingredients

  • 1 1/2 cups buckwheat flour (organic)
  • 1/2 cup gluten-free flour (all-purpose)
  • 2 teaspoons baking soda
  • Optional: 1/8 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups coconut milk (or almond milk, soy milk, or another dairy-free milk of your choosing)
  • 2 large eggs (lightly beaten)
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil (extra-virgin, cold-pressed if available)
  • 1/2 teaspoon vanilla extract (make sure it’s pure; imitation varieties can contain gluten)
  • 1 to 2 tablespoons coconut oil (virgin, for cooking and serving)
  • 1/2 cup chocolate chips

Benefits of Buckwheat Flour

  1. Although the name can be deceiving, buckwheat is pseudocereal similar to quinoa, making a great gluten free option!
  2. One cup of buckwheat contains about 5 grams of protein and about 4 grams fiber; making these pancakes substantially healthier than their conventional counterpart.
  3. Its high in essential minerals like: potassium, phosphorus, magnesium, calcium, and iron.
  4. It’s a good source of essential vitamins like: thamin, folate, vitamin B-6, and Vitamin K.
