With all the food restrictions recommended to endometriosis warriors, I new I had to find a way to enjoy the occasional treat.

I don’t believe in living a life full of constant restriction. But I do know that endo warriors, myself included, benefit from a gluten-free and dairy-free lifestyle. Additionally, many warriors find that a soy-free diet can be helpful.

This might have you believing that you can’t have your favorite cookie anymore. But I’m here to tell you that YOU CAN! So, today I am sharing my Gluten Free, Dairy Free, and Soy Free Chocolate Chip Cookies! ENJOY!

Ingredients

  • 2 ¼ cup All Purpose GF Flour Blend (1:1 ratio)
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 cup Brown Sugar
  • ½ cup Pure Cane Sugar
  • ¾ cup Soy-Free Vegan Butter (unsalted and melted)
  • 2 egg whites
  • 1 ½ tsp Vanilla Extract
  • 1 cup semi-sweet vegan chocolate chips

Instructions

  1. Whisk together the Flour, baking soda, and salt in a separate bowl.
  2. In second bowl, combine melted butter, sugars, and vanilla extract until thoroughly combined.
  3. When combined, mix egg whites into wet ingredients.
  4. Add dry ingredients to wet ingredients and whisk together until a cookie dough is formed.
  5. Fold chocolate chips into batter until evenly distributed.
  6. Place cookie dough into a sealable container and set in refrigerator overnight. This helps to eliminate the gritty texture that happens with gluten-free flours.
  7. Next morning/day, preheat oven to 350 degrees Fahrenheit when ready to bake cookies.
  8. Line a large cookie sheet with parchment paper.
  9. Divide dough into 1 inch diameter balls then slightly flatten onto cookie sheet.
  10. Bake for 12 minutes or until edges are lightly golden.
  11. Remove from oven and leave on cookie sheet to cool.

Tips and Considerations

  • Start by only baking 1-2 cookies to help determine the correct amount of time needed with your home oven.
  • It’s worth the wait to leave the dough in the refrigerator overnight, but the cookies are still good if you want to make them immediately after preparing cookie dough.
  • To get evenly baked cookies, rotate cookie sheet halfway through baking time.
  • Pair with Cashew milk to get most amazing replication of conventional cookies and milk.
