Although it gives me such great joy to be able to share with you GF & DF recipes that curb those comfort food cravings (i.e. cookies, mac and cheese, etc.), I have to admit that eating a well rounded whole foods diet is a better option when you are battling endometriosis.

And so, today I want to share with you a recipe that I found by Kelly at Eat Yourself Skinny.

This amazing and delicious Lentil and Sweet Potato stew is packed with so many nutritious and plant based ingredients! But what really caught my attention is the fact that it includes my favorite anti-inflammatory food, turmeric!

Even better, this recipe is very inexpensive to make and creates about 6 servings. It’s great for a family meal, or as an easy meal prepped lunch for the workplace. 

And if your into making freezer meals, you can definitely add this one to your list! I had my cooked stew in my freezer for 2 months before defrosting it and taking it to work one day. Th result was just as delicious as the day I made it.

So go ahead and get to meal prepping! I promise you it’ll be worth it!

Ingredients

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups green lentils, rinsed
  • 1 large sweet potato, peeled and cubed
  • 6 cups vegetable broth
  • 2 bay leaves
  • ½ tsp. turmeric
  • ¼ tsp. cumin
  • ½ tsp. black pepper
  • ½ tsp. sea salt
  • Fresh parsley, as garnish
