Spaghetti Squash Mexican Bowl
Gluten-Free, Dairy-Free, and packed with plant-based protein!
Total Cooking Duration: 1 hour, but this is a “set it and forget it” recipe 🙂
Ingredients
- 1 Spaghetti Squash
- 1.5 Cups cooked Black Beans or 1 can black beans (drained and rinsed)
- 2 cans Diced tomatoes and Green Chiles (I prefer to make a homemade “Rotel” with tomatoes, jalepenos, garlic, and white onion)
- 1 large avocado
- 1 tbsp Olive Oil
- 1 tsp salt
Instructions
- Preheat oven to 350 degrees.
- Cut spaghetti squash in half (length wise, as pictured).
- Scoop out seeds of spaghetti squash (I like to save these and roast them in the oven!).
- Mix salt and Olive oil.
- Lightly brush oil mixture on the inside of the spaghetti squash.
- Line a cookie sheet with parchment paper.
- Place the spaghetti squash face down on parchment paper (inside of squash should be flat on the cookie sheet).
- Heat the spaghetti squash in oven for 45 minutes.
- Warm beans in a sauce pan on low heat by themselves.
- Warm diced tomatoes and green chiles on low heat in a sauce pan by themselves.
- When the Spaghetti Squash is removed from the oven, flip the squash over to cool (face up) for 10 minutes.
- Prepare avocado slices or cubes for topping.
- To serve, fill the Spaghetti Squash “bowl” with black beans.
- Top with warmed tomatoes and green chiles.
- Add Avocado as the final touch and ENJOY!
- Optional: Top with cilantro and a fresh squeeze of lime juice.
NOTE: I am not one to cook with much salt, so add salt to taste. Either way, this dish is very filling, healthy, and delicious!
Extra Considerations for the Endo Warrior
Organic Produce
- Remember, tomatoes and hot peppers are on the EWG Dirty Dozen list! This means that they have high concentrations of pesticides, which are endocrine disruptors. Therefore, if making your own tomato/onion mixture, be mindful of the type of tomatoes and jalapenos you buy. And if buying canned Diced tomatoes and Green Chiles, choose the organic option.
BPA-free Canned Goods
- In my post about Xenoestrogen, I discuss the importance of avoiding BPA, bisphenol-A. Unfortunately, many canned goods are lined with BPA. If you opt for the canned good options in this recipe, look on the can for a “Non-BPA Lining” label. Just a tip, most organic canned goods have this label on them.
