Ingredients:

Crust
– Pesto sauce
– Mozzarella cheese
– Cherry tomatoes
– Orange bell pepper
– Corn
– Green bell pepper
– Broccoli
– Purple onion

1. Pre-heat oven to 500 F
2. Place pesto or tomato sauce on flat bread or cauliflower pizza
3. Add mozzarella on top of the sauce
4. Add veggies in rainbow order
5. Bake for 10 -15 minutes
6. Admire your creation and share with your loved ones and enjoy 🙂

Rainbow Kebabs

Ingredients

– Cherry tomatoes
– Red bell peppers
– Orange bell pepper
– Yellow squash
– Yellow bell pepper
– Zucchini
– Green bell pepper
– Red onion
– Purple potato

1. Pre-heat oven to 400 F
2. Wash and chop all veggies
3. Fork the purple potato 5 times and then microwave for 5 minutes
4. Place all ingredients on skewer
5. Dress in olive oil, lemon juice, salt, or pepper or other seasoning as desired or tolerated
6. Bake for 10-12 minutes

1. Fill popsicle mold half way with pedialyte
2. Drop in your favorite frozen fruits
3. Place in freezer until solid
